Inspection disposition: Warning Issued

Violations: 20 total (High: 5, Intermediate: 6, Basic: 9)

Basic - Bowl or other container with no handle used to dispense food. Grits in dry storage, also mixer in ice bin, bar.

Basic - Ceiling tile missing. Opened ceiling in kitchen.

Basic - Dead roaches on premises. 1 behind door, by storage shelf between cook line and kitchen entry. Cleaned on site. **Corrected On-Site**

Basic - In-use utensil stored in sanitizer between uses. Cook line, next to stove.

Basic - Reach-in cooler gasket torn/in disrepair. Throughout cook line.

Basic - Soil residue build-up on nonfood-contact surface. Storage shelf on kitchen, near cook line.

Basic - Ten (10) foot-candles of light at least 30 inches from floor not provided in dry food storage area. Dry storage. Establishment is using a lamp. chef states is temporarily and that electrician came today. Establishment is remodeling.

Basic - Wall not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas or bathroom. Holes and part of wooden panels are broken at the end of cook line.

Basic - Wiping cloth sanitizing solution stored on the floor. **Corrected On-Site**

High Priority - Live flies in kitchen. Near dish area, also in bar.

High Priority - Live, small flying insects in food storage area. Dry storage.

High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Butter chips 68°. Corrective action, added more ice to ice bath, homemade ranch made with buttermilk 56-60°. Corrective action, stirred and added more ice to ice bath. In expo station. **Repeat Violation**

High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in reach-in cooler. Container of raw burgers over container of raw shrimp. Reach in cooler in cook line across from stove.

High Priority - Sanitizing solution bucket stored on food preparation surface. Sanitizing solution where in use utensils are kept sitting on prep table next to stove, by cutting board. **Corrected On-Site**

Intermediate - Cutting board(s) stained/soiled. Black stains. Make tables in cook line.

Intermediate - Handwash sink not accessible for employee use due to being blocked by cutting board. Bar. **Corrected On-Site**

Intermediate - Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Near stove in cook line. Sous chef states sink broke two days ago.

Intermediate - Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the dishmachine. DM uses chlorine, has quaternary test kit.

Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.

Intermediate - Soda gun soiled. Heavy build up of pink slime substance. Bar.

This is the only place in town where a bad inspection report would not keep me away. The Monte Cristo is like crack.

Most restaurants get busted now and then. Should a thread be started every time for every restaurant where this happens?

Every restaurant gets inspected at a minimum every 6 months.  And the results make the paper. And in some rare cases, they get a unnecessary spotlight on metrojax.  I'm assuming that a Hawkers or Blackfin thread wasn't started even though their time had come as well. That said, we've been cooking out of a 90 year old kitchen for 8.5 years. We've never been proud of it. We've done the best we can. But now it's time to move into a brand new one, six times as big, and way fast.

He actually bumped the Hawkers thread for that report, but, looking at the Husker's posting history, nothing else warrants a mention. There's still time to share the inspection reports for every other restuarant in the city, however.

I've actually eaten at Chopstick Charley's on Philips, on multiple occasions, where molded ceiling is literally falling into my food and dishes were sitting around from days ago. Food was tasty!!  ;D

Yeah, this is pretty weak, 36 other restaurants are included in that link, and literally every restaurant goes through inspections. Come on now.
Do you believe that when the blue jay or another bird sings and the body is trembling, that is a signal that people are coming or something important is about to happen?

Damn you're brave, I really really want to try that place, it looks like it's been there forever (which from the outside looks like the last time they cleaned it), but I just don't have what it takes.

It's going on my bucket list :)

Thanks for responding, I posted these two specifc reports as I haven't eaten at the other restaurants on the list, while Kickbacks & Hawkers are both places I've been to. I've seen threads on both of these places and since both are in the urban core, I thought it may be of interest to some. I enjoy both of these places, but was surprised to see them on the list and hope they can resolve their issues.

Only place in town that, when you order an egg roll, literally goes back and rolls one on the spot. Freshest I've had in town.

Best Wonton soup I've had in town, as well.

I mean honestly, put their food in another location where you don't feel like you'll be raped robbed and murdered, and I bet it'd turn into one of the most popular ethnic spots in town.

As gross as this sounds, this is tame compared to most restaurant inspections in Jville.


I just think that place is a dump but the very butch waitresses are a blast.

So the health inspectors are wasting their time and shouldn't have jobs? And the news papers and news stations? Yes, it's a common occurrence and no, it's not a big deal, but yeesh...get off the guy's back for just posting a news story. It doesn't sound like he's got a vendetta to destroy these establishments.

Thanks for sharing. That's the whole point of the inspections. These reports are how restaurants are kept accountable to the public (and to the law 8) ).

There is no reason to keep them hidden.
