Fresh and Real Subs

I'm looking for a store that sells subs using meats they fully prepare on site.  I want meats that are cut and cooked the day before on-site and then served to you on a sub.  I'm looking for someplace where the people are very knowledgeable about the meats they use and the preparation methods they use for those meats. 

I don't want a place that serves cheap overpriced subs that serve factory meat.

There has been similar threads on this site. I think Larry's is usually tops for quality. I like Publix as well.

cityimrov, Uptown Market in springfield roast their own beef and, apparently, they roast their own turkey as well. I've been there once and ordered the roast beef sandwhich. I don't remember being blown away. I think I was a little put off by the service to appreciate what could have been a stellar meal. They have mixed reviews on yelp.

And, if you are in the mood for a diner like place. I recommend Grumpy's, in the orange park area. I've only been there once, recently (and I'm looking forward to going back). I had their roasted turkey club. They roast the turkey on site but you have to make sure you ask for the roasted turkey or they will give you the other stuff. I liked the sandwich and the atmosphere.  Based on my first experience, it's the type of diner I have been looking for in Jacksonville. No pretention. Slightly dirty. Good Food.
