Commercial Kitchen?

I make a delicious snack and thought it would be fun to sell it at RAM.  I checked and no one currently sells it so I got excited.  I live in 5pts and frequent RAM often so I thought it would be fun to a be a part of it.  I did some research and even thought up a snappy name.  I began dreaming of cool packaging and logos....  then, sadly I realized how complicated this would be.  I would need a "commercial rated kitchen" (it's pre-made, I wouldn't be cooking there) and I would need to get licenced to sell food in Florida, which looks ridiculously complicated.  I continued on regardless and even found a commercial kitchen I could become a member of downtown.  However, it would be $450 to join and $150 for each month I wanted to use it, even though I already have everything I need.  I was thinking more on the order of $50, and that might be a little steep, haha, but I guess he has to pay for all his overhead so it makes perfect sense.  I would do it if I could at least break even, but I don't like the idea of taking a loss each month.  How does anyone at RAM sell pre-made food?  Are they all caterers or own restaurants?  Are there any mom and pop operations?  How do they do it?  Would I need a legal team in case someone pulled a "there's a finger in my Wendy's chili"?  So complicated... maybe I should stick to being a customer.

Why don't you check with some of the existing pre-made food vendors at RAM and see what insights they have?
