Jacksonville's Most Ethical Restaurants?

Which restaurants in Jacksonville treat their customers AND employees right?  Which restaurant tries to instill ethical values of excellence to their venue?

And no, any place that skimps on paychecks, cuts hours because of some national heath insurance bill, gives up food safety, gives up real food, or has abusive/indifferent management doesn't count.

I judge a restaurant by how happy their employees look. Bold Bean's employees look happy and proud to be working for BB. Customers are treated fantastically.

Moon River employees also seem happy to be doing what they're doing. Carmine's employees are ill treated and look miserable.

Are you including ethically-sourced produce (by produce I mean both animal and vegetable) in the equation as well? I think any discussion of ethics when it comes to restaurants should also consider the carbon footprint of the restaurant and whether it uses Fair Trade and free range produce. Just a thought.

Like whether it serves things like foie gras and veal or certain types of fish (as some examples).

I was at Pom's for New Years.  The food and service were excellent and the staff seemed to genuinely enjoy their work.

So the ones that are trying to stay in business and save whatever jobs they can do not count?
