Is anyone confident that Mexico (a country that's well known for government corruption) is gonna keep this guy into custody? I'm certainly not. He already escaped before in 2001. Because of Mexico's unwillingness to extradite, he'll most likely will never be imprisoned in the US.

That is the most tired argument I've heard - and unfortunately it gets repeated over and over by people with limited life experience. X isn't a race. Well - what is a race? Where does race end and ethnicity begin? No one knows where. So racism has become the accepted term for what you and others might consider bigotry aimed at a particular ethnic group.
For example, the UK's Crime and Disorder Act (1998) states: "A racial group means a group of persons defined by reference to race, colour, nationality (including citizenship) or ethnic or national origins."
The UN defines racial discrimination as meaning any distinction, exclusion, restriction, or preference based on race, colour, descent, or national or ethnic origin that has the purpose or effect of nullifying or impairing the recognition, enjoyment or exercise, on an equal footing, of human rights and fundamental freedoms in the political, economic, social, cultural or any other field of public life.
So the UN also defines race and ethnicity as essentially the same thing. You may not agree, but I think there is evidence from the two examples above that it is not incorrect in today's world to refer to anti-Mexican sentiment as "racism".
What's more humorous to me, however, is the defence you offer - you quibble the definition of the word "racism". Oh yeah, Trump is a bigot but he's no RACIST!
Trump has a long history of saying and doing racist things. You'd think his ridiculous attempts to "prove" President Obama was born in Kenya would be evidence enough.
As far as your contention that his comments were about illegals and not Mexicans in general - so? Illegals are a subset of Mexican society - they aren't a separate group of people that don't share the same traits as other Mexicans. To call them rapists, drug dealers and criminals is to paint all Mexicans with the same brush.

So - are you really getting hung up on semantics here? Is the issue really about what the appropriate label is for Trump's form of bigotry?
As far as a technicality goes - I don't think so. Anti-Mexican comments can be considered racist. I've provided two definitions that show that racism can be used as a term to describe this sort of thing. You don't have to agree (which basically makes you look ignorant), but it at least shows that people in the world today consider it to be an accurate use of the word "racism". So I'm not off-base to call his behaviour racist (or him) racist.
Again - the point is not about the label, it's about the intent and the action. What is the difference between being "racist" (using your definition) and being a bigot? Just casting the net slightly wider? Is that what you want to make an issue of?

Latino is not a race. It's an ethnicity. This is a widely accepted fact.
There are roughly as many Italians in South America as there are in Italy. In fact, a substantial number of South Americans are Italian, Spanish, German, and other European nationalities.
That said, a significant number of people that are offspring of indigenous tribes of the Americas do exist in Central and South America (particularly in Mexico). Many of whom are among the lower classes. I believe these are these are the types Trump is referring to and you could probably consider it racist to discriminate against them imo, though I'd argue its more xenophobic.
The greatest irony is that those who make a big deal about how "Mexican" et al isn't a race are the same people who took exception to people referring to George Zimmerman as a white Hispanic.

But surely that's not the point. The term "racism" can encompass ethnic groups. Legally, it does in some jurisdictions. And that's because no one can agree on when something ceases to be an ethnicity and starts to be a race.
But even more importantly - it's the behaviour that it describes, not the target. So whether you are speaking ill of a racial group (whatever that is) or an ethnic group (whatever that is), you're basically doing the same thing. And if you call it racist (mainly because it's the easiest way to describe it), no one really should object.
If you don't like that, come to the UK and stand on a street corner screaming anti-Polish invectives. You're likely to be arrested and charged with incitement to racial hatred. You can argue the toss in front of the judges if you want to.

Mexico is actually gonna extradite El Chapo to the US?? Wow, I can't believe it! If that's the case, then I commend Mexico for swallowing their ego, and doing the right thing. If on US soil, this guy won't have a chance in hell of being free again.
